pancetta,
chilli and rosemary sauce topped with Parmesan.

Roast Guinea fowl with slow cooked leg on petit pois, with sage
and onion
mash, apple puree and a shallot and thyme sauce.
Roast ribeye of beef served with Yorkshire pudding, roast new potatoes
with red onions and balsamic vinegar, broccoli and horseradish sauce.
Carrot and swede puree

Bread and butter pudding (made with homemade bread, currants,
cranberries, sultanas, cherries, angelica and dried apricots, gently
baked
in a vanilla and rum custard) served with apricot compot and sauce
